Feeding the Family with ADHD

The other day I told someone the story about the time I invited 10 people to Christmas dinner and realized around midnight on Christmas eve that I hadn’t been to the grocery store in about 2 weeks. No milk, no eggs, no bread - much less turkey and the trimmings. And let me tell you, you can’t buy Christmas dinner at CVS Pharmacy on Christmas day.

I learned a lot of things from that incident, including keeping a few pantry meals on hand. Not that you could come up with a Christmas day pantry meal, but still, it’s a good idea for those of us with ADHD.

We all have busy, hectic lives. Add in Attention Deficit Disorder and you can see how easy it might be to forget something - even something as fundamental as buying groceries.

And even if you didn’t forget to shop, it’s nice to have something on hand you can make in a hurry.

Here’s the meal I made tonight:

1 large jar of Great Northern beans
1 can diced tomatoes
1/2 bag of frozen spinach
Parmesan cheese

Basically you put the beans, tomatoes (including liquid) and spinach into a large pot. Add additional water (or stock) to thin it out and make it more like soup. Season to taste. I used rosemary, thyme, garlic and onion powder along with salt and pepper. Heat until the spinach is cooked; about 10 minutes or so. Garnish with Parmesan cheese.

I served my soup with a salad and garlic bread and the whole family loved it.

If you like this idea, there are tons of resources online about pantry meals. I think even Rachael Ray does pantry meals.

One site I like a lot is Dr. Gourmet. The site is owned by an actual doctor, and he provides lots of recipes that can be made from the pantry. I particularly appreciated the specialty diet pantry meals included.

Next time you go grocery shopping, pick up a few pantry meal ingredients. At least if you forget to shop for food at Christmas time, you’ll still have something to serve your guests.

    Your website makes me feel a lot better! I’m pregnant for the first time and I’m really having a hard time managing ADD without ritalin. I can relate to a lot of your posts!

  • Thanks Becky! I know it’s hard, but it will be worth it :) Get lots and lots of rest now while you can! My mom always said “Never stand when you can sit and never sit when you can lay down.” Good advice for moms to be!
